When you're looking for a healthy family meal in 30 minutes or less, this Sheet Pan Za'atar Chicken & Carrots recipe is the way to go. Sheet pan meals are easy, fast, and light on clean-up—what's not to love? Just toss some skinless, boneless chicken thighs (they're less expensive than white meat, and less likely to dry out in the oven) and vegetables with a rub made with olive oil, Rich Garlic & Herb Cooking Concentrate, and a popular Middle Eastern seasoning blend onto a sheet pan, and it's ready to bake. This meal is a great way to get out of a recipe rut, and experiment with new flavors.

Ingredients

2 tablespoons Rich Garlic & Herb Cooking Concentrate
2 tablespoons olive oil
2 teaspoons Za'atar seasoning*
1 1/4 pounds boneless, skinless chicken thighs
3 large carrots, peeled and thinly sliced (about 3
cups)
1 small yellow bell pepper, cut into 2-inch long
strips (about 1 cup)
1 large onion, cut in half and thinly sliced (about
1 cup)
Directions
Heat the oven to 425°F.
Mix the oil, concentrate, and Za'atar seasoning in a large bowl. Add the chicken and vegetables, and toss to coat.
Arrange the chicken and vegetables on a rimmed baking sheet. Season with black pepper (no need to add salt).
Roast for 15 minutes. Stir and roast for another 5 minutes, or until the chicken is done.
Recipe Note
Za'atar is a Middle Eastern seasoning blend. The ingredients can vary, but generally contain a blend of dried herbs like zesty sumac with toasted sesame seeds, and sometimes salt and citrus peel. It also delivers a nice crunch. If you can't find it, you can substitute 1/2 teaspoon dried thyme leaves.
