Ingredients

2 tablespoons Savory Mushroom & Herb Cooking Concentrate
2 tablespoons lemon juice
2 tablespoons olive oil
1 tablespoon Dijon-style mustard
4 uncooked salmon fillets (about 1 1/4 pounds)
1 pound asparagus, trimmed and cut into 1 1/2-inch pieces (about 2 1/4 cups)
2 cups grape tomatoes
Directions
Heat the oven to 425°F.
While the oven is heating, spray a rimmed baking sheet with cooking spray.
Stir the concentrate, lemon juice, oil and mustard in a small bowl.
Arrange the salmon in the center of the baking sheet. Arrange the tomatoes and asparagus around the salmon.
Spoon the concentrate mixture over the salmon and vegetables. Season with black pepper (no need to add salt).
Roast for 12 minutes or until the salmon and vegetables are done.
Recipe Note
You can substitute thin-sliced skinless boneless chicken breasts for the salmon, if you like.
